Did you know that there are thousands of unique types of cheese in Martoise alone (not to mention the rest of Dántaine)? One of the most famous categories is herb-fermented goat cheese. To make it, a wheel of soft cheese is coated in various herbs and spices and left to mature for up to a year. Over time, the herb flavor penetrates the cheese and changes its color, taste, and even texture! To supplement the herb coating, some farms also feed their goats a diet of these herbs, which infuses the milk with extra flavor. Each cheesemaker has their own special blend of herbs that is a carefully-guarded family secret.
